By Amber, on July 31st, 2010% For our anniversary, Ian and I tend to do one blow-the-budget dinner. As we usually only do this once a year (maybe twice if we decide to get fancy for a birthday), I don’t mind laying down hard-earned cash for a delicious meal. And, as I’ve mentioned before, we’re pretty picky. Ian can make almost any dish from any restaurant at home. So, we figure, why spend the money when it’s better (and cheaper, and healthier) at home?
But, back to our blow out dinner. We’ve been hearing the buzz about Denver’s “newish” trend, Root Down, for a few months . . . → keep reading
By Amber, on July 30th, 2010% My brother is a Luthier.
A what?!
What did I just call him?
Well, for those not in tune (ha!) with music industry lingo, a Luthier is one who builds and repairs guitars. That’s right. My brother can take a chunk of wood:
"Chunks" of wood.
and turn it in to this:
Finished guitar!
He’s pretty darn talented! And, yes, he did go to school and is a professionally certified Luthier.
We stopped by his new shop to visit and scope out the new place. Within the . . . → keep reading
By Amber, on July 29th, 2010% Ian and I staycationed in Denver for our two-year anniversary! YIPEE! Thus, I’m chronicling where/what we ate, stayed, saw, did, and shopped for your reading and visiting pleasure. Enjoy!
I grew up eating Mexican food. A lot of Mexican food. I think I’ve eaten at nearly every Mexican food restaurant along the Front Range as well as in Littleton, Fort Collins, Denver, Boulder, and a smattering of other cities across Colorado (and the nation!). My parents are Mexican food fanatics, especially my dad. I think he could eat Mexican food every day and never grow tired of it. Thus, . . . → keep reading

By Amber, on July 25th, 2010% I mentioned a few weeks ago that I’ve been running on a new trail. Well, it’s about darn time I post some pictures and a trail review!
The intersection of Poudre Trail and Spring Creek Trail.
About two weeks ago, I had to give up running along the Power Trail because it no longer provided enough mileage. Plus, I was getting bored with the monotonous scenery. I enjoy running along Spring Creek Trail, but I was really hankering for a new path to try. Back when we first moved to Fort Collins, Ian and I used . . . → keep reading
By Amber, on July 23rd, 2010% As my two-year wedding anniversary approaches (it’s next week!), I’ve been reminiscing about my wedding and honeymoon. Ian and I worked hard to plan a simple, sustainable wedding in Colorado, and we tried to keep the theme going with a staycation in Aspen. I know this is a busy time of year for engagements and weddings, so I figured I’d write a small series to share a few fond memories and insightful tips about our nuptials and honeymoon in this great square state.
And the fun continues: Day 2
After our “little” hiking adventure on day one, we opted for . . . → keep reading

By Amber, on July 19th, 2010% Let me begin by saying I love KBCO! The Boulder radio station is very dedicated to local artists, and supportive of many other local ventures. I’ve been a listener for many, many years. It’s hard to go wrong with “world class rock!”
Over Father’s Day weekend, KBCO had what they call a Select-A-Set weekend. A Select-A-Set is a three-song set comprised of, well, any three songs you want to hear for really any reason! Father’s Day weekend prompted a three-song set marathon. Listeners were encouraged to submit a set, and if your set was chosen, you won free tickets to . . . → keep reading
By Amber, on July 18th, 2010% I know that it’s important to drink water. I typically guzzle two to three nalgene’s of water every day (that’s 64-96oz of water daily). Yes, I pee a lot, but I’m drinking the recommended 8-10 glasses of water a day.
As I’ve mentioned, I neglected to hydrate properly while training for my first half. By “neglected” I literally mean I did not drink water while training. It may seem odd that I would be so conscious in my daily effort to consume a sufficient amount of water, yet ignore those same rules while training. Sadly, my only excuse was that . . . → keep reading
